Ingredients

For the Pork

  • 1.8kg pork loin joint, butterflied
  • 1 tbsp olive oil
  • 1 tsp salt
  • Β½ tsp black pepper

For the Stuffing

  • 200g sage and onion stuffing mix
  • 300ml hot water
  • 1 eating apple, finely diced
  • 1 small onion, finely diced
  • 25g butter
  • 1 tsp fresh sage, chopped

For the Glaze

  • 2 tbsp honey
  • 1 tbsp wholegrain mustard
  • 1 tbsp apple juice

To Serve

  • Roast potatoes
  • Honey roasted carrots
  • Rich pork gravy

Method

Step 1 – Prepare the Stuffing

Melt the butter in a frying pan.

Cook the onion for 5 minutes until softened.

Add the apple and sage.

Cook for another 2 minutes.

Prepare the stuffing mix according to packet instructions.

Combine everything together.

Allow to cool.

Step 2 – Prepare the Pork

Lay the butterflied pork loin flat.

Season with salt and pepper.

Spread the stuffing evenly over the meat.

Step 3 – Create the Crown

Roll the pork tightly.

Secure with butcher’s string.

Rub with olive oil.
