Ingredients
For the Duck
- 1 whole duck (approximately 2kg)
- 1 tbsp sea salt
- 1 tsp black pepper
- 1 orange, quartered
- 2 sprigs fresh thyme
For the Orange Sauce
- Juice of 3 oranges
- Zest of 1 orange
- 150ml chicken stock
- 2 tbsp honey
- 1 tbsp red wine vinegar
- 1 tbsp butter
- 1 tsp cornflour mixed with 1 tbsp water
To Serve
- Dauphinoise potatoes
- Tenderstem broccoli
- Honey glazed carrots
Method
Step 1 – Prepare the Duck
Remove the duck from the fridge 30 minutes before cooking.
Pat the skin dry thoroughly.
Season generously with salt and pepper.
Place the orange quarters and thyme inside the cavity.
Step 2 – Begin the Roast
Preheat the oven to 200°C (180°C fan).
Place the duck on a roasting rack.
Roast for 30 minutes.
Step 3 – Render the Gold
Reduce the oven temperature to 180°C (160°C fan).
Continue roasting for 1 hour to 1 hour 15 minutes.
Baste occasionally with the rendered fat.
Step 4 – Rest the Treasure
Remove from the oven.
Cover loosely with foil.
Rest for 20 minutes.
Step 5 – Create the Royal Sauce
Place the orange juice, zest, stock, honey, and vinegar into a saucepan.
Bring to a gentle simmer.
Reduce by roughly one-third.
Step 6 – Finish the Feast
Stir in the cornflour mixture.
Cook until lightly thickened.
Whisk in the butter.
Step 7 – Serve
Carve the duck.
Arrange on a serving platter.
Spoon over the orange sauce.
Serve immediately.
