Makes

Approximately 250ml


Ingredients

  • 100ml clear honey
  • 2 tbsp wholegrain mustard
  • 1 tbsp Dijon mustard
  • 1 tbsp cider vinegar
  • 1 tbsp unsalted butter
  • 1 tsp fresh thyme leaves, finely chopped
  • ½ tsp cracked black pepper
  • Pinch of fine sea salt

Method

  1. Add the honey, both mustards, cider vinegar and butter to a small saucepan.
  2. Heat gently over a low heat, stirring continuously until the butter has melted.
  3. Stir in the thyme, black pepper and sea salt.
  4. Simmer gently for 2–3 minutes until slightly thickened.
  5. Remove from the heat and allow to cool slightly before serving or storing.

How To Use

  • Brush over roast ham during the final 20 minutes of cooking.
  • Glaze chicken thighs before roasting.
  • Finish grilled pork chops.
  • Drizzle over roasted carrots or parsnips.
  • Spoon over baked salmon.
  • Serve as a dipping sauce with sausages or chicken goujons.
