Ingredients
For the Bourguignon
- 1kg braising steak, cut into large chunks
- 150g smoked bacon lardons
- 2 tbsp plain flour
- 2 tbsp olive oil
- 2 onions, diced
- 2 carrots, sliced
- 3 cloves garlic, minced
- 500ml red wine
- 500ml beef stock
- 2 tbsp tomato purΓ©e
- 2 bay leaves
- 2 sprigs thyme
- 1 tsp salt
- Β½ tsp black pepper
For the Garnish
- 250g chestnut mushrooms
- 12 shallots or pearl onions
- 1 tbsp butter
To Serve
- Creamy mashed potatoes
- Crusty bread
- Buttered green beans
Method
Step 1 β Prepare the Beef
Pat the beef dry with kitchen paper.
Season generously with salt and pepper.
Dust lightly with flour.
Step 2 β Build the Foundation
Heat the olive oil in a large casserole dish.
Cook the bacon until lightly crisp.
Remove and set aside.
Brown the beef in batches.
Remove and set aside.
