Ingredients
For the Ham
- 2.5kg gammon joint
- 1 onion, quartered
- 2 carrots, roughly chopped
- 2 bay leaves
- 10 black peppercorns
For the Crownfire Glaze
- 4 tbsp honey
- 2 tbsp wholegrain mustard
- 2 tbsp brown sugar
- 1 tbsp orange juice
- Β½ tsp ground cinnamon
Optional Decoration
- Whole cloves
- Orange slices
- Fresh rosemary sprigs
Method
Step 1 β Prepare the Feast
Place the gammon into a large stock pot.
Add the onion, carrots, bay leaves, and peppercorns.
Cover with cold water.
Bring to a gentle simmer.
Step 2 β Cook the Ham
Simmer for approximately 2 hours.
Remove any foam that rises to the surface.
The ham should be tender but still hold its shape.
Step 3 β Prepare for the Glaze
Remove the ham from the stock.
Allow to cool slightly.
Carefully remove the skin while leaving a layer of fat.
Score the fat in a diamond pattern.
Step 4 β Create the Crownfire Glaze
Mix together the honey, mustard, brown sugar, orange juice, and cinnamon.
Brush generously over the scored fat.
Stud with cloves if using.
Step 5 β Roast to Perfection
Preheat the oven to 200Β°C (180Β°C fan).
Roast the ham for 25β30 minutes.
Baste several times during cooking.
The glaze should become sticky and golden.
Step 6 β Rest the Treasure
Allow the ham to rest for 15 minutes.
