Ingredients
For the Beef
- 1kg centre-cut beef fillet
- Salt and cracked black pepper
- 1 tbsp neutral oil
- 1 tsp English mustard (optional)
For the Mushroom Duxelles
- 400g chestnut mushrooms, very finely chopped
- 2 shallots, finely minced
- 2 cloves garlic, minced
- 2 tbsp butter
- 2 sprigs fresh thyme
- 100ml dark ale or stout
- Salt and black pepper
For the Beer Reduction Glaze
- 250ml dark ale or stout
- 1 tbsp brown sugar
- 1 tsp balsamic vinegar
- 1 tsp Worcestershire sauce
For the Wrap
- 8β10 slices prosciutto
- 1 sheet all-butter puff pastry
- 1 egg, beaten
Method
Step 1 β Sear the Royal Treasure
Tie the beef fillet if required to maintain an even shape.
Season generously with salt and pepper.
Heat a frying pan until smoking hot.
Sear the beef for 30β45 seconds on each side, including the ends.
Remove from the pan.
Brush lightly with English mustard if using.
Chill in the fridge for 20β30 minutes until completely cool.
Step 2 β Create the Golden Duxelles
Add the butter to the pan.
Cook the shallots for 2 minutes.
Add the garlic and cook for 30 seconds.
Add the mushrooms and thyme.
Cook for 8β10 minutes until the moisture evaporates.
Pour in the stout.
Continue cooking until the mixture becomes dry and paste-like.
Season well.
Allow to cool completely.
Step 3 β Forge the Beer Glaze
Place the stout into a small saucepan.
Add the brown sugar, balsamic vinegar, and Worcestershire sauce.
Simmer gently for 5β8 minutes until syrupy.
Allow to cool.
Step 4 β Build the Wellington
Lay a large sheet of cling film onto your work surface.
Arrange the prosciutto into a rectangle.
Spread the cooled mushroom duxelles evenly across the surface.
Brush the chilled beef lightly with the beer glaze.
Place the beef at one end.
Using the cling film, roll tightly into a sausage shape.
Twist the ends securely.
Chill for 20β30 minutes.
Step 5 β Wrap in Golden Armour
Roll the puff pastry slightly thinner if required.
Remove the cling film from the beef.
Place in the centre of the pastry.
Wrap tightly.
Trim any excess pastry.
Seal the edges using egg wash.
Chill for a further 20 minutes.
Lightly score the surface without cutting through.
Brush with egg wash twice for a deep golden finish.
Step 6 β Bake the Banquet Centrepiece
Preheat the oven to 200Β°C (180Β°C fan).
Bake for 25β30 minutes for medium rare.
Aim for an internal temperature of 48β50Β°C.
The temperature will continue rising during resting.
Step 7 β Rest the Feast
Allow the Wellington to rest for 10β15 minutes.
Slice carefully using a sharp knife.
Serve immediately.
