Ingredients
For the Lamb
- 2 racks of lamb (approximately 1kg total)
- 1 tbsp olive oil
- Salt and cracked black pepper
For the Herb Crust
- 75g fresh breadcrumbs
- 2 tbsp parsley, finely chopped
- 1 tbsp rosemary, finely chopped
- 1 tbsp thyme leaves
- 2 cloves garlic, minced
- 2 tbsp Dijon mustard
- 2 tbsp olive oil
To Serve
- Dauphinoise potatoes
- Honey roasted carrots
- Red wine jus
Method
Step 1 β Prepare the Lamb
Remove the lamb from the fridge 30 minutes before cooking.
Pat dry and season generously with salt and pepper.
Step 2 β Sear the Treasure
Heat the olive oil in a large frying pan.
Sear the lamb on all sides until golden brown.
Remove and allow to cool slightly.
Step 3 β Create the Golden Crust
Mix together the breadcrumbs, parsley, rosemary, thyme, garlic, and olive oil.
Step 4 β Build the Crown
Brush the lamb with Dijon mustard.
Press the herb mixture firmly onto the meat side of the racks.
Step 5 β Roast
Preheat the oven to 200Β°C (180Β°C fan).
Place the lamb onto a roasting tray.
Roast for:

- 30 minutes for medium
Step 6 β Rest the Feast
Remove from the oven.
Rest for 10 minutes.
Step 7 β Serve
Slice between the bones.
