Dragon’s Crown Beef Rib Roast

Ingredients
For the Roast
- 2.5kg bone-in rib of beef
- 2 tbsp olive oil
- 2 tsp sea salt
- 2 tsp cracked black pepper
- 2 tbsp fresh rosemary, chopped
- 1 tbsp thyme leaves
- 4 cloves garlic, crushed
For the Roasting Tray
- 2 onions, quartered
- 2 carrots, chopped
- 2 celery sticks, chopped
- 500ml beef stock
For the Pan Gravy
- Roasting juices
- 1 tbsp plain flour
- 250ml beef stock
- 1 tsp Worcestershire sauce
To Serve
- Roast potatoes
- Yorkshire puddings
- Honey roasted carrots
- Buttered greens
- Horseradish sauce
Method
Step 1 β Prepare the Crown
Remove the beef from the fridge 1 hour before cooking.
Pat dry thoroughly.
Mix together the olive oil, salt, pepper, rosemary, thyme, and garlic.
Rub generously over the entire joint.
Step 2 β Build the Throne
Place the onions, carrots, and celery into a large roasting tray.
Pour in the beef stock.
Position the rib roast on top.
Step 3 β Forge the Crust
Preheat the oven to 220Β°C (200Β°C fan).
Roast for 20 minutes to create a rich golden crust.
Step 4 β Slow Roast the Treasure
Reduce the oven temperature to 180Β°C (160Β°C fan).
Continue roasting:
- Rare: 15 minutes per 500g
- Medium Rare: 20 minutes per 500g
- Medium: 25 minutes per 500g
For best results, aim for an internal temperature of 52β55Β°C before resting.
Step 5 β Rest the Feast
Remove from the oven.
Cover loosely with foil.
Rest for 30 minutes.
Step 6 β Create the Gravy
Strain the roasting juices into a saucepan.
Whisk in the flour.
Gradually add the stock and Worcestershire sauce.
Simmer until thickened.
Step 7 β Serve
Carve into thick slices between the bones.
Serve with gravy, roast potatoes, Yorkshire puddings, and vegetables.
