Ingredients

For the Roast

  • 2.5kg bone-in rib of beef
  • 2 tbsp olive oil
  • 2 tsp sea salt
  • 2 tsp cracked black pepper
  • 2 tbsp fresh rosemary, chopped
  • 1 tbsp thyme leaves
  • 4 cloves garlic, crushed

For the Roasting Tray

  • 2 onions, quartered
  • 2 carrots, chopped
  • 2 celery sticks, chopped
  • 500ml beef stock

For the Pan Gravy

  • Roasting juices
  • 1 tbsp plain flour
  • 250ml beef stock
  • 1 tsp Worcestershire sauce

To Serve

  • Roast potatoes
  • Yorkshire puddings

  • Buttered greens
  • Horseradish sauce

Method

Step 1 – Prepare the Crown

Remove the beef from the fridge 1 hour before cooking.

Pat dry thoroughly.

Mix together the olive oil, salt, pepper, rosemary, thyme, and garlic.

Rub generously over the entire joint.

Step 2 – Build the Throne

Place the onions, carrots, and celery into a large roasting tray.

Pour in the beef stock.

Position the rib roast on top.

Step 3 – Forge the Crust
