Ingredients

  • 30g unsalted butter
  • 2 shallots, finely diced
  • 2 cloves garlic, finely minced
  • 150ml dry white wine
  • 200ml double cream
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • Zest of ½ lemon
  • Pinch of saffron threads (optional but highly recommended)
  • 1 tsp fresh thyme leaves
  • 30g finely grated Parmesan
  • Salt and freshly ground white pepper, to taste

Method

  1. Melt the butter in a saucepan over a medium-low heat.
  2. Add the shallots and cook gently for 4–5 minutes until softened.
  3. Stir in the garlic and cook for a further minute.
  4. Pour in the white wine and simmer until reduced by around half.
  5. Add the double cream, honey, Dijon mustard and saffron.
  6. Simmer gently for 5–6 minutes until the sauce begins to thicken.
  7. Stir in the Parmesan, lemon zest and thyme.
  8. Season with salt and white pepper before serving.
