Makes

Approximately 300ml


Ingredients

  • 1 whole garlic bulb
  • 200ml good-quality mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tsp extra virgin olive oil
  • ½ tsp fine sea salt
  • ½ tsp white pepper

Method

  1. Preheat the oven to 190°C (170°C fan).
  2. Slice the top off the garlic bulb, drizzle with olive oil and wrap in foil.
  3. Roast for 35–40 minutes, until soft and golden.
  4. Allow the garlic to cool slightly, then squeeze the roasted cloves into a bowl.
  5. Mash into a smooth paste.
  6. Add the mayonnaise, Dijon mustard, lemon juice, lemon zest, salt and white pepper.
  7. Stir until silky smooth.
  8. Refrigerate for at least 30 minutes before serving.
