Ingredients
For the Filling
- 300g salmon fillet, diced
- 300g white fish (cod, haddock, or hake), diced
- 200g king prawns, peeled and chopped
- 25g butter
- 1 onion, finely diced
- 2 tbsp plain flour
- 500ml whole milk
- 1 tsp Dijon mustard
- 100g frozen peas
- 1 tsp salt
- Β½ tsp black pepper
For the Potato Crown
- 1kg potatoes, peeled and chopped
- 50g butter
- 100ml milk
- Salt and pepper to taste
To Serve
- Buttered greens
- Crusty bread
- Garden peas
Method
Step 1 β Prepare the Potato Crown
Place the potatoes into a large saucepan.
Cover with cold salted water.
Bring to the boil and cook for 15β20 minutes until tender.
Drain thoroughly.
Mash with the butter and milk.
Season to taste.
Step 2 β Build the Sauce
Melt the butter in a large saucepan.
Add the onion and cook for 5 minutes until softened.
Stir in the flour.
Cook for 1 minute.
Gradually whisk in the milk.
Continue stirring until thickened.
Step 3 β Summon the Catch
Add the mustard, salt, and pepper.
Stir through the salmon, white fish, prawns, and peas.
Simmer gently for 5 minutes.
Step 4 β Build the Pie
Transfer the seafood mixture into a large ovenproof dish.
Spread the mashed potato evenly across the top.
Rough up the surface using a fork.
Step 5 β Bake
Preheat the oven to 200Β°C (180Β°C fan).
Bake for 30β35 minutes until golden brown and bubbling.
Step 6 β Serve
Allow to rest for 5 minutes before serving.
Serve with vegetables and crusty bread.
