Makes

Approximately 300ml


Ingredients

  • 80ml extra virgin olive oil
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 4 cloves garlic, finely minced
  • 2 tbsp fresh rosemary, finely chopped
  • 1 tbsp fresh thyme leaves
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 tsp cracked black pepper
  • 1 tsp fine sea salt

Method

  1. Add all ingredients to a mixing bowl or jug.
  2. Whisk until fully combined.
  3. Pour over the lamb in a sealable bag or shallow dish.
  4. Refrigerate for at least 4 hours, preferably overnight.
  5. Remove the lamb from the fridge 30 minutes before cooking and lightly pat away any excess marinade.
