For the Steak
- 4 sirloin steaks (250β300g each)
- 2 tbsp vegetable oil
- 2 tsp sea salt
- 1 tsp cracked black pepper
For the Dragon Butter
- 75g unsalted butter, softened
- 2 cloves garlic, finely minced
- 1 tbsp fresh parsley, chopped
- 1 tsp fresh thyme leaves
- Pinch of salt
To Serve
- Triple-cooked chips
- Grilled tomatoes

Method
Step 1 β Prepare the Beef
Remove the steaks from the fridge 30 minutes before cooking.
Pat dry thoroughly.
Brush lightly with oil.
Season generously with salt and pepper.

Mix together the butter, garlic, parsley, thyme, and salt.
Roll into a log using cling film.
Chill until needed.
