Ingredients
For the Turkey
- 1 whole turkey (5β6kg)
- 100g softened butter
- 2 tbsp olive oil
- 2 tsp sea salt
- 1 tsp black pepper
- 2 tsp garlic granules
- 2 tbsp fresh thyme
- 2 tbsp fresh rosemary
- 2 onions, quartered
- 1 lemon, halved
For the Roasting Tray
- 2 carrots, chopped
- 2 celery sticks, chopped
- 1 litre turkey or chicken stock
For the Gravy
- Roasting juices
- 500ml stock
- 2 tbsp plain flour
To Serve
- Roast potatoes
- Pigs in blankets
- Stuffing
- Honey roasted carrots
- Brussels sprouts
- Cranberry sauce
Method
Step 1 β Prepare the Crown
Remove the turkey from the fridge 1 hour before cooking.
Pat the skin completely dry.
Mix the butter with the herbs, garlic, salt, and pepper.
Carefully loosen the skin over the breast.
Spread half of the butter mixture beneath the skin.
Rub the remaining butter and olive oil over the outside.
Place the onions and lemon inside the cavity.
Step 2 β Build the Banquet Base
Place the carrots and celery into a large roasting tray.
Pour in the stock.
Position the turkey on a roasting rack.
Step 3 β Begin the Feast
Preheat the oven to 220Β°C (200Β°C fan).
Roast for 30 minutes.
Step 4 β Slow Roast the Treasure
Reduce the temperature to 180Β°C (160Β°C fan).
Cover loosely with foil.
Continue roasting for approximately 2Β½β3 hours.
Baste occasionally.
The thickest part of the thigh should reach 75Β°C.
Step 5 β Rest the Feast
Remove from the oven.
Cover loosely with foil.
Rest for 45 minutes.
Step 6 β Forge the Gravy
Strain the roasting juices.
Whisk in the flour.
Gradually add stock.
Simmer until thickened.
Step 7 β Serve
Carve at the table.
Serve alongside all the traditional banquet trimmings.
