Ingredients
For the Roast
- 2.5kg bone-in rib of beef
- 2 tbsp olive oil
- 2 tbsp sea salt
- 1 tbsp cracked black pepper
- 2 tbsp fresh rosemary, finely chopped
- 2 tbsp fresh thyme leaves
- 4 cloves garlic, crushed
For the Roasting Tray
- 2 onions, quartered
- 3 carrots, chopped
- 2 celery sticks, chopped
- 500ml beef stock
For the Gravy
- Roasting juices
- 500ml beef stock
- 1 tbsp plain flour
- 1 tsp Worcestershire sauce
To Serve
- Roast potatoes
- Yorkshire puddings
- Honey roasted carrots
- Buttered greens
Method
Step 1 β Prepare the Crown
Remove the beef from the fridge 1 hour before cooking.
Pat dry thoroughly.
Mix together the oil, salt, pepper, rosemary, thyme, and garlic.
Rub generously over the entire joint.
Step 2 β Build the Feast
Place the vegetables into a large roasting tray.
Pour in the beef stock.
Position the beef on a roasting rack above the vegetables.
Step 3 β Begin the Roast
Preheat the oven to 220Β°C (200Β°C fan).
Roast for 20 minutes to develop a crust.
Step 4 β Slow Cook the Treasure
Reduce the oven temperature to 180Β°C (160Β°C fan).
Continue roasting:
- Rare: 15 minutes per 500g
- Medium Rare: 20 minutes per 500g
- Medium: 25 minutes per 500g
Step 5 β Rest the Feast
Remove the beef from the oven.
Cover loosely with foil.
Rest for at least 30 minutes.
Step 6 β Forge the Gravy
Strain the roasting juices.
Place into a saucepan.
Whisk in the flour.
Add the beef stock and Worcestershire sauce.
Simmer until thickened.
Step 7 β Serve
Carve into thick slices.
Serve with gravy, Yorkshire puddings, and roasted vegetables.
