Ingredients
For the Seafood
- 300g salmon, diced
- 300g white fish (hake, cod, or haddock), diced
- 200g king prawns, peeled
- 25g butter
For the Thermidor Sauce
- 50g butter
- 1 shallot, finely diced
- 2 cloves garlic, minced
- 50g plain flour
- 400ml milk
- 100ml double cream
- 1 tbsp Dijon mustard
- 50g grated Gruyère cheese
- 1 tsp lemon juice
- Salt and black pepper
For the Golden Crown
- 75g grated Gruyère cheese
- 25g Parmesan cheese
- 2 tbsp breadcrumbs
To Serve
- Buttered asparagus
- Dauphinoise potatoes
- Lemon wedges
Method
Step 1 – Prepare the Seafood
Melt 25g butter in a frying pan.
Cook the salmon and white fish for 2 minutes.
Add the prawns.
Cook for a further minute.
Remove and set aside.
Step 2 – Create the Royal Sauce
Melt the butter in a saucepan.
Cook the shallot for 3–4 minutes.
Add the garlic.
Cook for 1 minute.
Step 3 – Build the Treasury
Stir in the flour.
Cook for 1 minute.
Gradually whisk in the milk.
Cook until thickened.
Step 4 – Summon the Gold
Add the cream, mustard, Gruyère, lemon juice, salt, and pepper.
Stir until smooth.
Step 5 – Unite the Feast
Fold the seafood gently into the sauce.
Transfer to a large ovenproof dish.
Step 6 – Create the Golden Crown
Mix together the Gruyère, Parmesan, and breadcrumbs.
Scatter evenly over the seafood mixture.
Step 7 – Bake
Preheat the oven to 200°C (180°C fan).
Bake for 15–20 minutes until bubbling and golden.
Step 8 – Serve
Serve immediately with potatoes and vegetables.
