For the Chocolate Base
- 250g chocolate digestive biscuits
- 100g unsalted butter, melted
For the Mint Chocolate Filling
- 300g dark chocolate, finely chopped
- 300ml double cream
- 50g unsalted butter
- 1 tsp peppermint extract
- Pinch of salt

- 50g dark chocolate, grated
- Fresh mint leaves

Method
Step 1 β Prepare the Base
Crush the biscuits into fine crumbs.
Mix with the melted butter.
Press firmly into a 23cm tart tin.
Chill for 30 minutes.
Step 2 β Create the Filling
Place the chocolate into a heatproof bowl.
Heat the cream and butter in a saucepan until just beginning to simmer.
Pour over the chocolate.
Leave for 2 minutes.
Step 3 β Summon the Glacier
Add the peppermint extract and salt.
Stir gently until smooth and glossy.
Step 4 β Build the Tart
Pour the filling into the chilled base.
Smooth the surface.
Step 5 β Freeze the Moment
Refrigerate for at least 4 hours until set.

Scatter over grated chocolate and chocolate curls.
Add fresh mint leaves.
