Froststep Salmon & Dill Soup

Ingredients

  • 500g skinless salmon fillet, cut into large cubes
  • 600g waxy potatoes, peeled and cut into chunks
  • 1 large leek, thoroughly washed and sliced
  • 1 carrot, sliced
  • 1 litre fish or light vegetable stock
  • 150ml double cream
  • 2 bay leaves
  • 5 allspice berries, lightly crushed
  • 20g fresh dill, chopped
  • 1 tbsp butter
  • 1 tsp lemon juice
  • Salt and white or black pepper
  • Rye bread, to serve

Method

  1. Melt the butter in a large saucepan and soften the leek and carrot for 5 minutes without browning.
  2. Add the potatoes, stock, bay leaves and allspice. Bring to a simmer and cook for 15–18 minutes until the potatoes are almost tender.
  3. Stir in the cream and return the soup to a very gentle simmer.
  4. Add the salmon cubes and cook for 4–5 minutes until just cooked through. Do not boil vigorously.
  5. Remove the bay leaves. Stir in most of the dill and the lemon juice.
  6. Season carefully, ladle into warm bowls and finish with the remaining dill. Serve with rye bread.
