Ingredients

  • 300g strong white bread flour
  • 7g fast-action dried yeast
  • 1 tsp caster sugar
  • 1 tsp fine salt
  • 180ml warm water
  • 1 tbsp olive oil
  • 200g grated mozzarella
  • 150g crumbled feta
  • 100g ricotta
  • 2 large eggs
  • 25g butter
  • Black pepper
  • Plain flour, for dusting

Method

  1. Mix the flour, yeast, sugar and salt in a bowl. Add the warm water and oil, then knead for 8–10 minutes until smooth.
  2. Cover and leave to rise for 1 hour, or until doubled in size.
  3. Heat the oven to 240°C (220°C fan) and place a baking tray inside to heat.
  4. Mix the mozzarella, feta and ricotta with a little black pepper.
  5. Divide the dough in two. Roll each piece into an oval, then roll the long edges inward and pinch the ends to form a boat.
  6. Place the boats on baking paper and fill with the cheese mixture. Transfer to the hot tray and bake for 12–14 minutes.
  7. Make a hollow in each cheese filling and crack in an egg. Bake for another 3–4 minutes, until the white is barely set.
  8. Add butter to each boat and serve immediately, stirring the egg, butter and cheese together before tearing off pieces of crust.
