Ingredients

  • 650g boneless skinless chicken thighs, cut into bite-size pieces
  • 2 tbsp gochujang
  • 1 tbsp gochugaru, optional
  • 2 tbsp light soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey or brown sugar
  • 2 tsp sesame oil
  • 3 garlic cloves, grated
  • 1 tbsp grated fresh ginger
  • 1 small sweet potato, peeled and thinly sliced
  • 1/2 small white cabbage, roughly chopped
  • 1 onion, sliced
  • 2 spring onions, sliced
  • 150g chewy rice cakes, soaked if required, optional
  • 1 tbsp vegetable oil
  • Toasted sesame seeds, to finish
  • Steamed rice, to serve

Method

  1. Mix the gochujang, gochugaru, soy sauce, vinegar, honey, sesame oil, garlic and ginger in a large bowl.
  2. Add the chicken and turn until thoroughly coated. Leave for 15 minutes while preparing the vegetables.
  3. Heat the vegetable oil in a large deep frying pan. Add the sweet potato with 3 tbsp water, cover and cook for 6 minutes.
  4. Add the onion, cabbage and marinated chicken. Cook uncovered for 12–15 minutes, stirring regularly.
  5. Add the rice cakes, if using, and a splash of water. Cook for 4–5 minutes until the chicken is cooked and the sauce clings to everything.
  6. Finish with spring onions and sesame seeds. Serve immediately with rice.
