Saffron Citadel Chicken Tagine

Ingredients

  • 600g boneless skinless chicken thighs
  • 1 large onion, thinly sliced
  • 3 garlic cloves, crushed
  • 1 tbsp grated fresh ginger
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 1/2 tsp ground cinnamon
  • 1 pinch saffron threads, soaked in 2 tbsp warm water
  • 1 preserved lemon, rind rinsed and finely sliced
  • 75g dried apricots, halved
  • 100g green olives
  • 400ml chicken stock
  • 1 tbsp olive oil
  • Salt and black pepper
  • Fresh parsley or coriander, to finish
  • Cooked couscous, to serve

Method

  1. Season the chicken with salt and pepper. Heat the oil in a heavy casserole and brown the chicken for 3–4 minutes per side, then set aside.
  2. Lower the heat and soften the onion for 8 minutes. Add the garlic, ginger, cumin, coriander, turmeric and cinnamon; cook for 1 minute.
  3. Return the chicken and add the saffron water, stock, apricots and preserved lemon. Bring to a gentle simmer.
  4. Cover and cook over low heat for 35 minutes, turning the chicken once.
  5. Add the olives and simmer uncovered for 10 minutes until the sauce is glossy and the chicken is cooked through.
  6. Taste before adding extra salt, as the preserved lemon and olives are already salty.
  7. Scatter with herbs and serve with couscous.

If preserved lemon is unavailable, use the finely grated zest of one lemon and add a squeeze of juice just before serving.
