Ingredients
For the Steaks
- 4 sirloin steaks (250g each)
- 1 tbsp vegetable oil
- 1 tsp sea salt
- 2 tbsp cracked black pepper
For the Peppercorn Sauce
- 25g butter
- 1 shallot, finely diced
- 2 cloves garlic, minced
- 2 tbsp green peppercorns
- 100ml brandy (optional)
- 200ml beef stock
- 150ml double cream
- 1 tsp Dijon mustard
To Serve
- Chunky chips
- Onion rings
- Grilled tomatoes
- Watercress
Method
Step 1 β Prepare the Beef
Remove the steaks from the fridge 30 minutes before cooking.
Pat dry with kitchen paper.
Season with salt and coat generously with cracked black pepper.
Step 2 β Heat the Forge
Heat a heavy frying pan or griddle until smoking hot.
Add the oil.
Step 3 β Sear the Treasure
Cook the steaks to your preferred doneness:
- Rare: 2β3 minutes per side
- Medium Rare: 3β4 minutes per side
- Medium: 4β5 minutes per side
Remove and rest under foil.
Step 4 β Create the Sauce
Reduce the heat slightly.
Add the butter and shallot.
Cook for 2β3 minutes.
Add the garlic and peppercorns.
Cook for 1 minute.
Step 5 β Summon the Dragon’s Gravy
Add the brandy if using.
Allow it to reduce by half.
Add the beef stock and mustard.
Simmer for 3 minutes.
Stir in the cream.
Cook until thickened.
Step 6 β Serve
Place the steaks onto warm plates.
Pour over the peppercorn sauce.
Serve immediately with your chosen sides.
