Ingredients
For the Chicken
- 1 large whole chicken (2β2.5kg)
- 2 tbsp olive oil
- 2 tsp sea salt
- 1 tsp black pepper
- 2 tsp garlic granules
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme leaves
- 1 lemon, halved
For the Roasting Tray
- 2 onions, quartered
- 3 carrots, roughly chopped
- 2 celery sticks, chopped
- 500ml chicken stock
To Serve
- Roast potatoes
- Honey roasted vegetables
- Rich chicken gravy
Method
Step 1 β Prepare the Crown
Remove the chicken from the fridge 30 minutes before cooking.
Pat the skin completely dry.
Rub with olive oil.
Season generously with salt, pepper, garlic, rosemary, and thyme.
Place the lemon halves inside the cavity.
Step 2 β Build the Banquet Base
Place the onions, carrots, and celery into a large roasting tray.
Pour in the chicken stock.
Position the chicken on top.
Step 3 β Begin the Feast
Preheat the oven to 200Β°C (180Β°C fan).
Roast for 30 minutes.
Step 4 β Create the Golden Crown
Reduce the temperature to 180Β°C (160Β°C fan).
Continue roasting for approximately 1 hour 15 minutes.
Baste occasionally with the pan juices.
The thickest part of the thigh should reach 75Β°C.
Step 5 β Rest the Treasure
Remove the chicken from the oven.
Cover loosely with foil.
Rest for 20 minutes.
Step 6 β Forge the Gravy
Strain the roasting juices.
Skim excess fat.
Simmer and reduce if required.
Thicken to your preferred consistency.
Step 7 β Serve
Carve at the table.
Serve with roasted vegetables, potatoes, and gravy.
