Ingredients
For the Steak
- 2 large rump steaks (approximately 250g each)
- 1 tbsp olive oil
- 1 tsp salt
- Β½ tsp black pepper
For the Caramelised Onions
- 2 large onions, sliced
- 25g butter
- 1 tsp brown sugar
For the Ale Mustard Sauce
- 2 tbsp mayonnaise
- 1 tbsp wholegrain mustard
- 1 tsp ale or stout (optional)
For Assembly
- 4 ciabatta rolls or large bread rolls
- 150g mature cheddar cheese, sliced
- Handful of rocket leaves
To Serve
- Chunky chips
- Coleslaw
- Pickles
Method
Step 1 β Caramelise the Onions
Melt the butter in a frying pan.
Add the onions and brown sugar.
Cook gently for 15β20 minutes until soft, golden, and sweet.
Step 2 β Prepare the Sauce
Mix the mayonnaise, mustard, and ale together.
Set aside.
Step 3 β Cook the Steak
Heat a frying pan or griddle until very hot.
Brush the steaks with oil.
Season with salt and pepper.
Cook:
- Rare: 2β3 minutes per side
- Medium: 4β5 minutes per side
- Well Done: 6β7 minutes per side
Rest for 5 minutes.
Step 4 β Toast the Bread
Lightly toast the rolls under a grill or in a dry pan.
Step 5 β Build the Feast
Spread the ale mustard sauce onto the bread.
Layer with rocket leaves.
Slice the steak thinly and pile generously onto the rolls.
Top with caramelised onions and cheddar cheese.
Step 6 β Melt the Treasure
Place under a hot grill for 1β2 minutes until the cheese begins to melt.
Step 7 β Serve
Serve immediately with chunky chips, pickles, and coleslaw.
