For the Sponge
- 200g pitted dates, chopped
- 250ml boiling water
- 1 tsp bicarbonate of soda
- 75g butter, softened
- 150g light brown sugar
- 2 large eggs
- 175g self-raising flour
- 1 tsp vanilla extract
For the Toffee Sauce
- 100g butter
- 150g dark brown sugar
- 200ml double cream
- 1 tsp vanilla extract

- Vanilla ice cream
- Custard
- Double cream
Method
Step 1 β Prepare the Dates
Place the chopped dates into a bowl.
Pour over the boiling water.
Add the bicarbonate of soda.
Leave for 10 minutes.
Step 2 β Create the Sponge
Cream together the butter and sugar until light.
Beat in the eggs one at a time.
Stir in the vanilla.
Fold in the flour.
Mix through the softened date mixture.
Step 3 β Bake the Pudding
Pour into a greased baking dish.
Bake at 180Β°C (160Β°C fan) for 30β35 minutes until risen and firm.
Step 4 β Forge the Toffee
Place the butter, brown sugar, cream, and vanilla into a saucepan.
Heat gently until smooth.
Simmer for 3β4 minutes.
