Azure Archipelago Chicken Adobo

Ingredients
- 1kg bone-in chicken thighs and drumsticks
- 120ml cane vinegar or rice vinegar
- 100ml light soy sauce
- 8 garlic cloves, lightly crushed
- 3 bay leaves
- 2 tsp whole black peppercorns
- 1 tbsp brown sugar, optional
- 200ml water
- 1 tbsp neutral oil
- 4 spring onions, sliced
- Steamed jasmine rice, to serve
Method
- Combine the chicken, vinegar, soy sauce, garlic, bay leaves and peppercorns in a bowl. Marinate for 30 minutes if time allows.
- Lift out the chicken, reserving the marinade. Pat the skin dry.
- Heat the oil in a wide casserole and brown the chicken skin-side down for 5–6 minutes. Turn and cook for 2 minutes more.
- Pour in the reserved marinade and water. Bring to a simmer without stirring for the first 2 minutes.
- Cover and cook gently for 25 minutes, turning the chicken halfway through.
- Remove the lid and simmer for 10–15 minutes until the chicken is tender and the sauce is glossy. Add the sugar only if you prefer a softer vinegar edge.
- Discard the bay leaves, scatter with spring onions and serve with rice.

Adobo is defined by its vinegar savouriness. Let the sauce reduce and taste it with rice before deciding whether it needs sugar.

If the sauce tastes too sharp, simmer it uncovered for a little longer rather than adding much sugar; reduction will round out the vinegar.
🧄 Garlic Hoard
Leave a few garlic cloves whole so they soften into sweet, savoury morsels during cooking.
🔥 Charred Finish
For crisp edges, place the cooked chicken under a hot grill for two or three minutes before spooning over the reduced sauce.
🍚 Island Serving
Serve with plenty of steamed rice and lightly dressed greens to balance the glossy, punchy sauce.
