Ember Coast Peanut Stew

This Ember Coast pot combines sweet potato, tomato, ginger and groundnuts in a generous, warming sauce. Chickpeas and greens make it a satisfying meat-free feast.

Ingredients

  • 1 large onion, diced
  • 3 garlic cloves, crushed
  • 1 tbsp grated fresh ginger
  • 1 red chilli, finely chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp smoked paprika
  • 2 medium sweet potatoes, peeled and cubed
  • 1 x 400g tin chopped tomatoes
  • 1 x 400g tin chickpeas, drained
  • 750ml vegetable stock
  • 150g smooth unsweetened peanut butter
  • 150g spinach or chopped kale
  • 1 tbsp vegetable oil
  • Juice of 1 lime
  • Salt and black pepper
  • Roasted peanuts and fresh coriander, to finish
  • Cooked rice, to serve

Method

  1. Heat the oil in a large casserole. Cook the onion for 8 minutes until soft.
  2. Add the garlic, ginger, chilli, cumin, coriander and paprika. Stir for 1 minute.
  3. Add the sweet potato, tomatoes, chickpeas and stock. Bring to a simmer.
  4. Cover and cook for 25 minutes, until the sweet potato is tender.
  5. Spoon the peanut butter into a bowl and loosen it with a ladleful of hot broth, then stir the mixture back into the pot.
  6. Add the spinach and simmer uncovered for 5 minutes until the stew is thick and the greens have wilted.
  7. Season with lime juice, salt and pepper. Finish with peanuts and coriander, and serve with rice.

Unsweetened peanut butter gives the cleanest flavour. Add extra stock if the stew thickens more than you like.
