Ingredients
For the Tart Case
- 1 sheet ready-rolled shortcrust pastry
For the Filling
- 3 ripe pears, peeled and thinly sliced
- 2 large eggs
- 200ml single cream
- 2 tbsp dark rum
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- Β½ tsp cinnamon
- Pinch of nutmeg
To Finish
- 1 tbsp flaked almonds
- Light dusting of icing sugar (optional)
To Serve
- Greek yoghurt
- Lightly whipped cream
- Vanilla skyr
Method
Step 1 β Prepare the Tart Case
Preheat the oven to 190Β°C (170Β°C fan).
Line a 23cm tart tin with the pastry.
Trim the edges.
Prick the base with a fork.
Step 2 β Blind Bake
Line with baking paper and baking beans.
Bake for 15 minutes.
Remove the paper and beans.
Bake for a further 5 minutes.
Allow to cool slightly.
Step 3 β Prepare the Pears
Peel, core, and thinly slice the pears.
Arrange them neatly across the tart base.
Step 4 β Create the Frostharbour Custard
In a bowl whisk together:
- Eggs
- Cream
- Rum
- Maple syrup
- Vanilla
- Cinnamon
- Nutmeg
Mix until smooth.
Step 5 β Build the Feast
Carefully pour the custard mixture over the pears.
Scatter over the flaked almonds.
Step 6 β Bake
Bake for 30β35 minutes.
The filling should be just set with a slight wobble in the centre.
Step 7 β Rest and Serve
Allow to cool for at least 20 minutes.
Serve warm or chilled.
