  • 1 large onion, finely diced
  • 1 red pepper, diced
  • 1 yellow pepper, diced
  • 3 cloves garlic, minced
  • 300g paella rice
  • 1 tsp smoked paprika
  • Β½ tsp turmeric
  • Pinch saffron (optional)
  • 1 litre fish stock
  • 200g cherry tomatoes, halved

For the Leviathan’s Catch

  • 250g hake or cod, cut into chunks
  • 200g salmon, cut into chunks
  • 200g king prawns, peeled
  • 150g mussels
  • 150g squid rings
  • 100g frozen peas

To Finish

  • 1 lemon, cut into wedges
  • Fresh parsley, chopped

Method

Step 1 – Begin the Harbour Feast

Heat the olive oil in a large paella pan or wide frying pan.

Add the onion and peppers.

Cook for 5 minutes until softened.

Step 2 – Awaken the Spices

Add the garlic, smoked paprika, turmeric, and saffron.

Cook for 1 minute while stirring.

Step 3 – Build the Golden Sea

Add the paella rice.

Stir thoroughly to coat in the spices.

Pour in the fish stock.

Add the cherry tomatoes.

Bring to a gentle simmer.

Step 4 – Let the Tide Rise

Cook for 15 minutes, stirring occasionally.

The rice should begin absorbing the stock.

Step 5 – Summon the Leviathan’s Catch

Arrange the hake, salmon, prawns, mussels, squid, and peas over the rice.

Do not stir.

Allow everything to cook gently for a further 15–18 minutes.

Step 6 – Create the Treasure Crust

Increase the heat slightly during the final 2 minutes.

This helps create the prized crispy rice layer on the bottom of the pan.

Step 7 – Rest the Feast

Remove from the heat.

Cover loosely with foil.

Allow to rest for 5 minutes.

Step 8 – Serve

Scatter over fresh parsley.

Serve directly from the pan with lemon wedges.

πŸ‰ Dragon’s Tip

Resist the urge to stir once the seafood is added. This helps the rice cook properly and encourages the formation of the delicious crispy bottom layer.

πŸ“œ Lore of the Hoard

Legend tells of a colossal sea creature known as the Leviathan that once prowled the waters beyond the Blue Dragon territories. While no sailor has ever truly captured the beast, returning crews would celebrate successful voyages by combining every prized catch from their journey into a single magnificent feast. Over time, those celebrations evolved into Leviathan’s Catch Seafood Paella. Today it remains the ultimate symbol of prosperity, adventure, and the bounty of the sea, served whenever Blue Dragon clans gather to celebrate great achievements. πŸŒŠπŸ‰
