Ingredients
For the Crab Cakes
- 300g white crab meat
- 200g mashed potato, cooled
- 150g sweetcorn
- 2 spring onions, finely sliced
- 1 egg
- 1 tbsp mayonnaise
- 1 tsp lemon zest
- 1 tsp Dijon mustard
- 1 tsp salt
- Β½ tsp black pepper
For the Coating
- 50g plain flour
- 2 eggs, beaten
- 100g breadcrumbs
For Frying
- 2 tbsp vegetable oil
To Serve
- Lemon wedges
- Tartare sauce
- Mixed salad
Method
Step 1 β Create the Filling
In a large bowl combine the crab meat, mashed potato, sweetcorn, spring onions, egg, mayonnaise, lemon zest, mustard, salt, and pepper.
Mix gently until combined.
Step 2 β Shape the Cakes
Divide the mixture into 8 equal portions.
Shape into round cakes.
Place into the fridge for 20 minutes if time allows.
Step 3 β Prepare the Coating
Place the flour, beaten eggs, and breadcrumbs into separate bowls.
Coat each crab cake in flour.
Dip into egg.
Cover with breadcrumbs.
Step 4 β Summon the Golden Crust
Heat the oil in a large frying pan.
Cook the crab cakes for 3β4 minutes per side until crisp and golden brown.
Step 5 β Serve
Serve immediately with lemon wedges, tartare sauce, and salad.
