Ingredients
For the Harvest Layers
- 2 courgettes, sliced
- 2 carrots, thinly sliced
- 1 red pepper, diced
- 1 yellow pepper, diced
- 1 red onion, sliced
- 2 tbsp olive oil
- 1 tsp oregano
- 1 tsp thyme
- 1 tsp salt
- Β½ tsp black pepper
For the Three-Cheese Sauce
- 50g butter
- 50g plain flour
- 600ml milk
- 75g mature cheddar, grated
- 75g mozzarella, grated
- 50g parmesan, grated
- Β½ tsp nutmeg
To Finish
- 50g grated cheddar
- Fresh parsley
Method
Step 1 β Roast the Harvest
Preheat the oven to 200Β°C (180Β°C fan).
Place the vegetables into a roasting tray.
Drizzle with olive oil.
Season with oregano, thyme, salt, and pepper.
Roast for 20 minutes.
Step 2 β Create the Cheese Sauce
Melt the butter in a saucepan.
Stir in the flour.
Cook for 1 minute.
Gradually whisk in the milk.
Cook until thickened.
Step 3 β Summon the Treasure
Add the cheddar, mozzarella, parmesan, and nutmeg.
Stir until smooth and creamy.
Step 4 β Build the Feast
Transfer the roasted vegetables into a baking dish.
Pour over the cheese sauce.
Mix gently.
Step 5 β Crown the Bake
Scatter over the remaining cheddar.
Step 6 β Return to the Grove
Bake for 25β30 minutes until golden and bubbling.

Allow to rest for 5 minutes.
