Ingredients
For the Risotto
- 1 tbsp olive oil
- 25g butter
- 1 large onion, finely diced
- 3 cloves garlic, minced
- 300g risotto rice
- 250g chestnut mushrooms, sliced
- 1 litre vegetable stock, kept warm
- 75g grated parmesan
- 50g butter
- 1 tsp thyme
- 1 tsp salt
- Β½ tsp black pepper
Optional Garnish
- Fresh parsley
- Extra parmesan
- Toasted pine nuts
Method
Step 1 β Begin the Harvest
Heat the olive oil and butter in a large saucepan.
Add the onion and cook gently for 5 minutes until softened.
Step 2 β Awaken the Woodland
Add the mushrooms and cook for 5β6 minutes until lightly golden.
Add the garlic and thyme.
Cook for another minute.
Step 3 β Toast the Rice
Add the risotto rice.
Stir continuously for 1β2 minutes until lightly coated.
Step 4 β Summon the Broth
Add one ladle of warm stock.
Stir until absorbed.
Continue adding stock one ladle at a time, stirring regularly.
Repeat until the rice is tender and creamy.
This should take around 25 minutes.
Step 5 β Finish the Feast
Remove from the heat.
Stir through the parmesan, butter, salt, and pepper.
Allow to rest for 2 minutes.
Step 6 β Serve
Divide between warm bowls.
Top with parsley, parmesan, or toasted pine nuts if desired.
Serve immediately.
