Ingredients
For the Vegetable Filling
- 2 tbsp olive oil
- 1 large onion, diced
- 2 courgettes, diced
- 2 carrots, grated
- 1 red pepper, diced
- 2 cloves garlic, minced
- 2 x 400g tins chopped tomatoes
- 2 tbsp tomato purée
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp salt
- ½ tsp black pepper
For the Béchamel Sauce
- 50g butter
- 50g plain flour
- 600ml milk
- 75g grated cheddar cheese
- ¼ tsp nutmeg
For Assembly
- 12 lasagne sheets
- 150g grated mozzarella
- 50g grated cheddar
Method
Step 1 – Build the Harvest Filling
Heat the olive oil in a large saucepan.
Cook the onion for 5 minutes until softened.
Add the courgettes, carrots, and pepper.
Cook for another 5 minutes.
Step 2 – Awaken the Grove
Add the garlic.
Cook for 1 minute.
Add the chopped tomatoes, tomato purée, basil, oregano, salt, and pepper.
Simmer gently for 20 minutes until thickened.
Step 3 – Create the Béchamel
Melt the butter in a saucepan.
Stir in the flour and cook for 1 minute.
Gradually add the milk while whisking continuously.
Cook until thickened.
Stir in the cheddar and nutmeg.
Step 4 – Build the Feast
Spread a thin layer of vegetable sauce into a large baking dish.
Add a layer of lasagne sheets.
Cover with vegetable sauce.
Add a layer of béchamel.
Repeat until all ingredients are used.
Finish with béchamel on top.
Step 5 – Crown the Lasagne
Scatter over the mozzarella and cheddar.
Step 6 – Bake
Bake at 190°C (170°C fan) for 35–40 minutes.
The top should be golden and bubbling.
Step 7 – Rest and Serve
Allow to rest for 10 minutes before slicing.
Serve with salad or garlic bread.
