Rustscale Potato Samosas

Ingredients

  • 500g potatoes, diced
  • 100g frozen peas
  • 1 tsp cumin seeds
  • 1 tsp ground coriander
  • ½ tsp turmeric
  • ½ tsp chilli flakes
  • 2 tbsp chopped coriander
  • 8 sheets filo pastry
  • 50g melted butter

Method

Step 1

Boil the potatoes until tender, drain and crush, then mix with peas, spices and coriander.

Step 2

Cut the filo into strips and brush lightly with butter.

Step 3

Add filling and fold into triangles, sealing with butter.

Step 4

Bake at 200°C for 18–22 minutes until crisp and copper-gold.
