Ingredients

  • 400g cold cooked risotto rice
  • Pinch of saffron soaked in warm water
  • 80g mozzarella, cubed
  • 60g plain flour
  • 2 eggs, beaten
  • 150g breadcrumbs
  • Oil for frying
  • Tomato sauce

Method

Step 1

Mix the saffron and soaking water through the cold rice.

Step 2

Press a cheese cube into spoonfuls of rice and shape into balls.

Step 3

Roll in flour, dip in egg and coat with breadcrumbs.

Step 4

Fry in batches until deeply golden and serve with warm tomato sauce.
