Ingredients
For the Pot
- 1.5kg unsmoked gammon joint
- 2 onions, quartered
- 3 carrots, chopped
- 2 celery sticks, chopped
- 3 cloves garlic, crushed
- 750ml dry cider
- 500ml chicken stock
- 2 bay leaves
- 1 tsp dried thyme
- 1 tsp black pepper
Darkwater Glaze
- 2 tbsp honey
- 1 tbsp wholegrain mustard
- 1 tsp smoked paprika
To Serve
- Creamy mashed potatoes
- Buttered cabbage
- Roasted carrots
Method
Step 1 β Prepare the Cauldron
Place the onions, carrots, celery, and garlic into the bottom of a slow cooker.
Position the gammon joint on top.
Step 2 β Summon the Broth
Pour in the cider and stock.
Add the bay leaves, thyme, and black pepper.
Step 3 β Enter the Shadows
Cover and cook:
- Low: 7β8 hours
- High: 5β6 hours
The gammon should become beautifully tender.
Step 4 β Forge the Glaze
Remove the gammon carefully.
Mix together the honey, mustard, and smoked paprika.
Brush generously over the surface.

Place the glazed gammon into a preheated oven at 200Β°C (180Β°C fan) for 15β20 minutes until lightly caramelised.

Slice the gammon thickly.
