Dragonfire Chilli Burgers

Ingredients
For the Burgers
- 500g beef mince (15–20% fat)
- 1 red chilli, finely diced
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp Worcestershire sauce
- 1 tsp salt
- ½ tsp black pepper
Dragonfire Sauce
- 4 tbsp mayonnaise
- 1 tbsp sriracha
- 1 tsp smoked paprika
- ½ tsp cayenne pepper
To Serve
- 4 burger buns
- 4 slices mature cheddar cheese
- Lettuce leaves
- 1 large tomato, sliced
- ½ red onion, sliced
Method
Step 1 – Forge the Patties
Place the beef mince, chilli, garlic, smoked paprika, Worcestershire sauce, salt, and pepper into a bowl.
Mix until evenly combined.
Divide into 4 equal portions and shape into burger patties approximately 2cm thick.
Step 2 – Prepare the Dragonfire Sauce
Mix the mayonnaise, sriracha, smoked paprika, and cayenne pepper in a small bowl.
Set aside.
Step 3 – Cook the Burgers
Heat a frying pan, griddle, or barbecue over medium-high heat.
Cook the burgers for 5–6 minutes on each side until cooked through and nicely browned.
Place a slice of cheddar on each burger during the final minute of cooking.
Step 4 – Toast the Buns
Lightly toast the burger buns until golden.
Step 5 – Assemble
Spread Dragonfire Sauce onto the buns.
Layer with lettuce, tomato, red onion, the cheesy burger patty, and the top bun.
Serve immediately.
