- 300g smoked haddock, cut into chunks

- 200ml double cream
- 200g sweetcorn
- 1 tsp dried thyme
- 1 tsp salt

- Crusty bread
- Fresh parsley

Method
Step 1 β Begin the Broth
Heat the butter and olive oil in a large stock pot.
Add the onion, celery, and carrots.
Cook for 5β6 minutes until softened.
Step 2 β Awaken the Harbour
Add the garlic and thyme.
Cook for 1 minute until fragrant.
Step 3 β Build the Chowder
Add the potatoes.
Pour in the stock.
Bring to a gentle boil.
Reduce to a simmer.
Cook for 15β20 minutes until the potatoes become tender.

Add the smoked haddock, white fish, and sweetcorn.
