Ingredients
For the Fish Filling
- 500g hake, cod, or haddock, cut into chunks
- 250g salmon, cut into chunks
- 50g butter
- 1 onion, finely diced
- 2 cloves garlic, minced
- 50g plain flour
- 600ml milk
- 1 tsp dried parsley
- 1 tsp dried thyme
- 1 tsp salt
- Β½ tsp black pepper
- 150g frozen peas
For the Potato Crown
- 1kg potatoes, peeled and chopped
- 75g butter
- 150ml milk
- Salt and pepper to taste

- 75g mature cheddar cheese, grated
Method
Step 1 β Prepare the Potatoes
Place the potatoes into a large saucepan.
Cover with salted water.
Bring to the boil and cook for 15β20 minutes until tender.
Step 2 β Begin the Sauce
While the potatoes cook, melt the butter in a large saucepan.
Add the onion and cook for 5 minutes until softened.
Add the garlic and cook for another minute.
Step 3 β Build the Creamy Base
Stir in the flour.
Cook for 1 minute.
Gradually add the milk while whisking continuously.
Cook until thickened.
Add the parsley, thyme, salt, and pepper.
Step 4 β Summon the Catch
Add the fish chunks and peas.
Cook gently for 5 minutes.
The fish will finish cooking in the oven.
Step 5 β Create the Potato Crown
Drain the potatoes.
Mash with the butter and milk until smooth.
Season to taste.
Step 6 β Assemble the Feast
Transfer the fish filling into a large baking dish.
Spread the mashed potato evenly over the top.
Rough up the surface with a fork.
Sprinkle over the cheese if using.
Step 7 β Return to the Sea Forge
Bake at 200Β°C (180Β°C fan) for 25β30 minutes.
