Obsidian Cave Charred Aubergine

Ingredients

  • 2 aubergines
  • 2 tbsp tahini
  • 1 lemon, juiced
  • 1 clove garlic, crushed
  • 2 tbsp olive oil
  • 2 tbsp pomegranate seeds
  • 1 tbsp chopped parsley
  • Flatbread

Method

Step 1

Pierce the aubergines and roast at 230°C for 25–30 minutes until collapsed.

Step 2

Scoop out the flesh and drain for 5 minutes.

Step 3

Mash with tahini, lemon, garlic, olive oil, salt and pepper.

Step 4

Finish with pomegranate and parsley and serve with toasted flatbread.

🐉 Dragon’s Tip

A little char on the skin gives the flesh its campfire flavour.
