Ingredients
For the Sausages
- 8 good-quality pork sausages
- 1 tbsp olive oil
For the Mash
- 800g potatoes, peeled and chopped
- 50g butter
- 100ml milk
- Salt and pepper to taste
For the Northwatch Onion Gravy
- 2 large onions, thinly sliced
- 25g butter
- 1 tbsp plain flour
- 500ml beef stock
- 1 tbsp Worcestershire sauce
- 1 tsp thyme
- Salt and black pepper to taste
Method
Step 1 β Prepare the Potatoes
Place the potatoes into a large saucepan.
Cover with cold water and add a pinch of salt.
Bring to the boil and cook for 15β20 minutes until tender.
Step 2 β Cook the Sausages
While the potatoes cook, heat the olive oil in a large frying pan.
Cook the sausages for 12β15 minutes, turning regularly until golden brown and fully cooked.
Remove and keep warm.
Step 3 β Begin the Gravy
Using the same pan, add the butter.
Add the sliced onions.
Cook gently for 8β10 minutes until softened and caramelised.
Step 4 β Forge the Northwatch Gravy
Sprinkle over the flour and stir thoroughly.
Cook for 1 minute.
Gradually add the beef stock while stirring continuously.
Add the Worcestershire sauce and thyme.
Simmer for 5β6 minutes until thickened.
Season to taste.
Step 5 β Create the Mash
Drain the potatoes.
Add the butter and milk.
Mash until smooth and creamy.
Season with salt and pepper.
Step 6 β Assemble the Feast
Divide the mash between plates.
Top with sausages.
