Ingredients
For the Pasta
- 300g macaroni pasta
- 1 tsp salt
For the Dragonfire Cheese Sauce
- 50g butter
- 50g plain flour
- 600ml whole milk
- 200g mature cheddar cheese, grated
- 100g mozzarella, grated
- 1 tsp smoked paprika
- ½ tsp chilli flakes
- ½ tsp garlic powder
- 1 tsp Dijon mustard
- Salt and pepper to taste
Fire Dragon Topping
- 50g mature cheddar cheese
- 25g breadcrumbs
- ½ tsp smoked paprika
- ¼ tsp chilli flakes
Method
Step 1 – Cook the Pasta
Bring a large pan of salted water to the boil.
Cook the macaroni according to packet instructions until al dente.
Drain and set aside.
Step 2 – Forge the Cheese Sauce
Melt the butter in a saucepan over medium heat.
Stir in the flour and cook for 1 minute to create a roux.
Gradually add the milk, whisking continuously to prevent lumps.
Continue cooking until the sauce thickens.
Step 3 – Awaken the Dragonfire
Reduce the heat.
Add the cheddar, mozzarella, smoked paprika, chilli flakes, garlic powder, and mustard.
Stir until smooth and creamy.
Season to taste.
Step 4 – Combine the Hoard
Add the cooked pasta to the sauce.
Stir until every piece is coated in molten cheese.
Transfer to a large ovenproof dish.
Step 5 – Create the Crust
Mix the topping ingredients together.
Scatter evenly over the macaroni.
Bake at 200°C (180°C fan) for 15 minutes until golden and bubbling.
Step 6 – Serve
Allow to rest for 5 minutes before serving.
