Ingredients

Alcoholic Version

  • 50ml gin
  • 25ml elderflower liqueur
  • 30ml cooled chamomile tea
  • 15ml honey syrup
  • 20ml fresh lemon juice
  • Top with sparkling wine
  • Ice cubes

Alcohol-Free Version

  • 60ml cooled chamomile tea
  • 30ml elderflower cordial
  • 20ml fresh lemon juice
  • 15ml honey syrup
  • Top with sparkling elderflower presse
  • Ice cubes

Method

  1. Brew the chamomile tea and allow it to cool.
  2. Fill a cocktail shaker with ice.
  3. Add all ingredients except the sparkling wine or presse.
  4. Shake well for 15 seconds.
  5. Strain into a chilled wine glass.
  6. Top with sparkling wine or elderflower presse.
  7. Garnish before serving.

Garnish

  • Edible white flowers
  • Lemon twist
  • Fresh thyme sprig
  • Optional edible gold leaf
