For the Fishcakes
- 500g white fish fillets (hake, cod, or haddock)
- 600g potatoes, peeled and chopped
- 1 tbsp butter
- 1 lemon, zest only

Method
Step 1 β Cook the Potatoes
Place the potatoes into a saucepan.
Cover with salted water.
Bring to the boil and cook for 15β20 minutes until tender.
Drain thoroughly.

Place the fish onto a baking tray.
Bake at 180Β°C (160Β°C fan) for 12β15 minutes until cooked through.
Allow to cool slightly.
Flake into large pieces.

Mash the potatoes with the butter.
Add the fish, lemon zest, parsley, spring onions, salt, and pepper.
Mix gently until combined.

Divide the mixture into 8 equal portions.
Shape into round patties.
Place in the fridge for 20 minutes if time allows.

Coat each fishcake in flour.
Dip into beaten egg.
Cover with breadcrumbs.

Heat the oil in a large frying pan.
