  • 4 large bell peppers
  • 1 tbsp olive oil

For the Filling

  • 200g long-grain rice
  • 1 onion, finely diced

  • 100g sweetcorn
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 400g chopped tomatoes
  • 100g mature cheddar cheese, grated
  • 1 tsp salt
  • Β½ tsp black pepper

To Finish

  • 50g grated cheese
  • Fresh parsley

Method

Step 1 – Prepare the Peppers

Preheat your oven to 200Β°C (180Β°C fan).

Slice the tops from the peppers and remove the seeds.

Place them into a baking dish.

Step 2 – Cook the Rice

Cook the rice according to packet instructions.

Drain and set aside.

Step 3 – Build the Filling

Heat the olive oil in a frying pan.

Cook the onion for 4–5 minutes until softened.

Add the garlic, courgette, and carrot.

Cook for another 5 minutes.
