Before maps are unfurled and plans are made, enormous platters of Volcano Nachos are placed upon the tables. Layered with seasoned beef, molten cheese, fiery peppers, and Dragonfire sauce, this legendary sharing feast has fuelled countless heroic adventures.

Ingredients

For the Nachos

  • 300g tortilla chips
  • 500g beef mince
  • 1 tbsp olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp chilli powder
  • ยฝ tsp cayenne pepper
  • Salt and black pepper to taste

Volcano Toppings

  • 250g mature cheddar cheese, grated
  • 1 red chilli, sliced
  • 1 jalapeรฑo, sliced
  • 4 spring onions, sliced
  • 1 small red onion, finely diced

Dragonfire Drizzle

  • 4 tbsp sour cream
  • 2 tbsp sriracha
  • 1 tsp hot sauce

Optional Treasure Hoard Additions

  • Guacamole
  • Salsa
  • Diced tomatoes
  • Black beans
  • Sweetcorn

Method

Step 1 โ€“ Forge the Filling

Heat the olive oil in a large frying pan.

Add the onion and cook for 4โ€“5 minutes until softened.

Add the garlic and cook for another minute.

Step 2 โ€“ Brown the Beef

Add the beef mince.

Cook until browned throughout, breaking it apart with a spoon.

Drain any excess fat.

Step 3 โ€“ Awaken the Dragonfire

Add the smoked paprika, chilli powder, cayenne pepper, salt, and pepper.

Cook for 2 minutes until fragrant.

Remove from the heat.

Step 4 โ€“ Build the Volcano

Preheat the oven to 200ยฐC (180ยฐC fan).

Spread half the tortilla chips across a large ovenproof dish.

Scatter over half the beef mixture and half the cheese.

Repeat with a second layer.

Step 5 โ€“ Erupt the Volcano

Bake for 8โ€“10 minutes until the cheese is fully melted and bubbling.

Step 6 โ€“ Crown the Hoard

Mix the sour cream, sriracha, and hot sauce together.

Drizzle over the nachos.

Scatter over the chillies, jalapeรฑos, spring onions, and red onion.

Add any optional toppings.

Serve immediately.
