Ingredients

Alcoholic Version

• 50ml blue curaçao
• 25ml white rum
• 50ml pineapple juice
• 25ml fresh lemon juice
• Top with chilled lemonade
• Ice cubes

Alcohol-Free Version

• 75ml blue sports drink or blue raspberry syrup
• 50ml pineapple juice
• 25ml fresh lemon juice
• Top with chilled lemonade
• Ice cubes

Lightning Foam

• 1 egg white (or 30ml aquafaba for a vegan version)
• 1 tsp sugar syrup

Method

1. Fill a cocktail shaker with ice.
2. Add the main drink ingredients (except the lemonade).
3. Shake vigorously for 15 seconds.
4. Strain into a tall glass filled with fresh ice.
5. Top with chilled lemonade.
6. Dry shake the egg white (or aquafaba) with the sugar syrup until thick and foamy.
7. Spoon a layer of foam over the drink.
