Ingredients
For the Curry
- 800g chicken thighs, diced
- 2 tbsp vegetable oil
- 2 large onions, diced
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp mild curry powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp turmeric
- 1 tbsp tomato purΓ©e
- 400g chopped tomatoes
- 400ml coconut milk
- 250ml chicken stock
- 1 tsp salt
- Β½ tsp black pepper
To Serve
- Steamed rice
- Naan bread
- Fresh coriander
Method
Step 1 β Awaken the Spices
Heat the oil in a large frying pan.
Add the onions and cook for 5 minutes until softened.
Add the garlic and ginger.
Cook for 1 minute.

Add the curry powder, cumin, paprika, and turmeric.

Transfer everything to the slow cooker.
Add the chicken, chopped tomatoes, coconut milk, stock, salt, and pepper.
Stir thoroughly.
