Ingredients
- 1 tbsp juniper berries
- 1 tbsp black peppercorns
- 2 tsp dried rosemary
- 2 tsp garlic granules
- 1 tsp mustard powder
- 1½ tsp sea salt
Method
- Crush juniper and peppercorns using a mortar.
- Add rosemary and grind briefly.
- Stir in garlic, mustard and salt.
- Seal in a dry jar and label.
How to Use
Use 1 tbsp per 500g meat or mushrooms.
Merchant’s Tip
Add a teaspoon of brown sugar when roasting.
Storage
Keeps for three months in a cool cupboard.
