    2 goblets<\/p>

    Ingredients<\/h2>
    • 4 ripe plums, stoned and chopped<\/li>
    • 80g sugar<\/li>
    • 1 star anise<\/li>
    • 1 tbsp lemon juice<\/li>
    • 350ml soda water<\/li>
    • Ice<\/li><\/ul>

      Method<\/h2>
      1. Simmer plums, sugar, star anise and 100ml water for 12 minutes.<\/li>
      2. Cool, remove the star anise and strain.<\/li>
      3. Spoon the plum syrup into ice-filled glasses.<\/li>
      4. Add lemon juice, top with soda water and stir.<\/li><\/ol>

        Alchemist\u2019s Tip<\/h2>

        Use red or purple plums for the deepest colour. Add only half the syrup at first and adjust to taste.<\/p>
